When the Borg can adapt to any situation and any set of circumstances - if aging is not in their interest they would adapt so that the very process of aging in all biological entities would end forever. Borgs are also selective as to whom they assimilate - the Klingon type race the crew of Voyager encountered in the Delta quadrant were not assimilated because for some the Borg considered them inferior - the Borg seek perfection and if aging is as a defect or considered imperfect the Borg would end it. When the Borg assimilate a Bethazoid or any race which has powerful telepathic powers, the Borg certainly would assimilate such ability.

Yes, Voyager did encounter a group of Klingon's in the Delta Quadrant but The Borg probably never encountered them. Any Quadrant is large. A quadrant is tens of thousands of light year and the Borg may be strong but they don't cover every light year of space. If the Borg did encounter them they would of defiantly assimilated them. Those Klingon's would have been in space for years and years and all that knowledge and data they would have accumulated over the years would have been valuable to Borg. Also the Borg would have assimilated them to find out how they got in that quadrant as they do not posses the technology yet. Klingon Borg have been seen Assimilated. On First Contact I think you see at least two assimilated Klingon's. Klingon's are good for combat because they are a lot stronger. Also on the episode about Unimatrix 0 when Borg who are mutated. Meaning they retain their individuality when they regenerate. You see some Klingon's and their even mentioned. Also one Klingon Borg also commands a Sphere to help Voyager. I don't know if it has been said when Betazed's get assimilated that the Borg can use their telepathic powers. In my opinion I would say no because the brain is then filled with Borg stuff that could damage their abilities. I would say no matter what species the drone they live forever. They have encountered and assimilated over 10,000 species so when has bound to have anti-aging technology. Also their bodies don't require food or water just energy from regeneration.
