Does anyone have any links to literature on what determines Starfleet uniform color AND what they are?

I was surprised Memory Alpha doesn't have the specific information I was looking for.
I asked someone in an instant messenger about it and they gave me this:
"Red uniforms are for command and navigation, gold uniforms are for engineering, security, and operations, and blue uniforms are for science, including medicine"
I have no idea where he got this, but It seems right.

Yeah, and to make it even more complicated - in the old days blue was still of the sciences but red was command and gold (yellow) for captaincy. It only changed from star trek: next gen, when all command was red and gold went to engineering/security/operations.

Didn't the uniform styles keep changing for each movie? As for the TOS movies, the uniforms only changed once, between the first and second movies.
