Or maybe not, but it sounded cool.
When Yoda and Obi-wan are talking at the end of the movie, there is that little bit about Qui-Gon...anyone want to take a stab at explaining why they threw it in there, and then abruptly didn't show anything with it?

I believe they threw that in there because for the past 10 or 12 years or whatever since Qui-Gon's death, he had not communicated with Obi-Wan. In the old trilogy, 'Ben Kenobi' makes it seem like it is common place for the Jedi to come from the grave to speak to other Jedi. If that is so, then why didn't Qui-Gon come back during the troubling times if Episode II and III? From what Yoda said, it seems Qui-Gon was the first to discover how to do this, or at least the first in a VERY long time. I'd then assume Qui-Gon teaches Obi-Wan how to do this, and this is how he comes back to guide Luke in years to come. At least that was my take on it.

Yes Qui-Gon basicallly discovered the jedi ghost trick and that is why they threw that in there. It was Lucas' way of explaining how Yoda, Obi-Wan, and Anakin appear as ghosts in the original trilogy when no other jedi appear in this form throughout the SW movies.

Also, yes, it needs to explain why Obi-Wan just sort of vanished when Vader 'kills' him in Episode IV. And why Obi-Wan was babbling before allowing himself to be killed about 'In death you shall only increase my power' stuff

This makes sense. I guess it also explains why none of them disappeared before.

Me also. The only sense I could make of it was that they felt the funeral scene was really, really important, and that they wanted to show the depth of the slaughter on Geonosis....

Honestly, I think that Lucas just plain out goofed there on that one. He had to offer some kind of explanation for it though as it had become a big question among the die hard fans.
